A creamy cucumber salad with crisp bacon, cheese, and red onion, tossed in a tangy dressing.

Ingredients

2 cups cucumber, thinly sliced
6 slices bacon, cooked and crumbled
1/2 cup shredded cheddar or Colby cheese
1/4 cup red onion, thinly sliced
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1 tablespoon apple cider vinegar or lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons fresh parsley or chives, chopped
Optional: 1/4 cup cherry tomatoes, halved

Instructions

  • Slice cucumbers and set aside.

  • Cook bacon until crisp and crumble.

  • Slice red onion and chop herbs. Prepare cheese.

  • Whisk mayonnaise, sour cream, vinegar, garlic powder, salt, and pepper.

  • Combine cucumbers, bacon, red onion, cheese, and optional tomatoes.

  • Pour dressing over salad and toss gently.

  • Sprinkle herbs and chill 15–30 minutes before serving.

Notes

Prepare just before serving for maximum freshness. Avoid over-dressing to maintain crispness.
