2 cups cucumber, thinly sliced
6 slices bacon, cooked and crumbled
1/2 cup shredded cheddar or Colby cheese
1/4 cup red onion, thinly sliced
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1 tablespoon apple cider vinegar or lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons fresh parsley or chives, chopped
Optional: 1/4 cup cherry tomatoes, halved
Slice cucumbers and set aside.
Cook bacon until crisp and crumble.
Slice red onion and chop herbs. Prepare cheese.
Whisk mayonnaise, sour cream, vinegar, garlic powder, salt, and pepper.
Combine cucumbers, bacon, red onion, cheese, and optional tomatoes.
Pour dressing over salad and toss gently.
Sprinkle herbs and chill 15–30 minutes before serving.
