2 cups chopped tomatoes
1 large cucumber, sliced
½ small red onion, thinly sliced
¾ cup Kalamata olives (pitted)
½ cup feta cheese, crumbled
¼ cup extra virgin olive oil
2 tbsp red wine vinegar
½ tsp dried oregano
¼ tsp salt
Black pepper, to taste
Optional: 1 tsp lemon juice
Chop tomatoes, slice cucumber, and thinly slice red onion.
Combine vegetables and olives in a large bowl.
Whisk together olive oil, vinegar, oregano, salt, and pepper.
Pour dressing over vegetables and toss gently.
Crumble feta over the top just before serving.
