Ingredients

3 cups fresh pineapple, diced
1 large English cucumber, sliced
1/4 cup red onion, thinly sliced
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon honey
1/4 teaspoon salt
2 tablespoons chopped fresh cilantro
1 to 2 teaspoons minced jalapeño, optional

Instructions

  • Dice pineapple into bite-sized pieces.

  • Slice cucumber into thin half-moons.

  • Thinly slice red onion and soak briefly in cold water if desired.

  • Whisk lime juice, olive oil, honey, and salt in a small bowl.

  • Combine pineapple, cucumber, red onion, cilantro, and jalapeño in a large bowl.

  • Pour dressing over salad and toss gently.

  • Let rest for 10 to 15 minutes before serving.

Notes

Use fresh pineapple for best texture. Add dressing just before serving if preparing ahead. Mint can substitute for cilantro.
