3 cups fresh pineapple, diced
1 large English cucumber, sliced
1/4 cup red onion, thinly sliced
2 tablespoons fresh lime juice

1 teaspoon honey
1/4 teaspoon salt
2 tablespoons chopped fresh cilantro
1 to 2 teaspoons minced jalapeño, optional
Dice pineapple into bite-sized pieces.
Slice cucumber into thin half-moons.
Thinly slice red onion and soak briefly in cold water if desired.
Whisk lime juice, olive oil, honey, and salt in a small bowl.
Combine pineapple, cucumber, red onion, cilantro, and jalapeño in a large bowl.
