4 boneless chicken thighs or 2 chicken breasts (halved)
1 cup buttermilk
1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
Salt and pepper to taste
4 slices cheese (American, cheddar, or mozzarella)
4 brioche or potato buns
Vegetable oil for frying
Butter for toasting buns
Pickles or slaw (optional)
Marinate chicken in buttermilk with garlic powder, paprika, salt, and pepper for at least 1 hour.
Mix flour, cornstarch, and remaining seasonings in a shallow dish.
Heat oil in a heavy pan to 350°F.
Dredge chicken in seasoned flour, pressing to coat.
