Golden, crispy Fried Chicken Buns with melted cheese and soft brioche buns. Packed with flavor, texture, and customizable toppings for the ultimate sandwich.

Ingredients

4 boneless chicken thighs or 2 chicken breasts (halved)
1 cup buttermilk
1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
Salt and pepper to taste
4 slices cheese (American, cheddar, or mozzarella)
4 brioche or potato buns
Vegetable oil for frying
Butter for toasting buns
Pickles or slaw (optional)

Instructions

  • Marinate chicken in buttermilk with garlic powder, paprika, salt, and pepper for at least 1 hour.

  • Mix flour, cornstarch, and remaining seasonings in a shallow dish.

  • Heat oil in a heavy pan to 350°F.

  • Dredge chicken in seasoned flour, pressing to coat.

  • Fry chicken 5–6 minutes per side until golden and cooked through.

  • Drain and top immediately with cheese.

  • Toast buns with butter until golden.

  • Assemble chicken on buns with optional toppings and serve hot.

Notes
