2 lbs bone-in, skin-on chicken thighs (or boneless thighs/breasts)
1.5 lbs baby potatoes, halved
3 large carrots, cut into thick rounds
2 cups green beans or broccoli florets
4 cloves garlic, minced
4 tbsp butter, melted
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley or thyme, for garnish
Season chicken with salt, pepper, paprika, and Italian seasoning.
(Optional) Sear chicken in a skillet until golden brown, 2–3 mins per side.
Place potatoes and carrots in bottom of slow cooker.
Lay chicken on top of vegetables.
Sprinkle minced garlic over chicken and veggies.
Pour melted butter evenly over everything.
Cover and cook on low for 6–7 hours or high for 3.5–4 hours.
Add green beans or broccoli during the final hour.
Serve hot, spooning garlic butter over the top. Garnish with herbs.
