Garlic Butter Chicken and Vegetables in the Slow Cooker

A cozy and flavorful one-pot meal with juicy garlic butter chicken, tender potatoes, and vibrant vegetables. Perfect for busy weeknights or slow Sundays.

Ingredients

2 lbs bone-in, skin-on chicken thighs (or boneless thighs/breasts)
1.5 lbs baby potatoes, halved
3 large carrots, cut into thick rounds
2 cups green beans or broccoli florets
4 cloves garlic, minced
4 tbsp butter, melted
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley or thyme, for garnish

Instructions

  • Season chicken with salt, pepper, paprika, and Italian seasoning.

  • (Optional) Sear chicken in a skillet until golden brown, 2–3 mins per side.

  • Place potatoes and carrots in bottom of slow cooker.

  • Lay chicken on top of vegetables.

  • Sprinkle minced garlic over chicken and veggies.

  • Pour melted butter evenly over everything.

  • Cover and cook on low for 6–7 hours or high for 3.5–4 hours.

  • Add green beans or broccoli during the final hour.

  • Serve hot, spooning garlic butter over the top. Garnish with herbs.

Notes

Use fresh garlic for the best flavor. Add a squeeze of lemon juice before serving for brightness.
