A simple and comforting potato side dish with crispy edges and tender centers, seasoned to perfection.

Ingredients

Ingredients:
2 pounds Yukon Gold potatoes, cut into bite-sized pieces
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon dried thyme or rosemary
2 tablespoons fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • Wash, dry, and cut potatoes into even pieces.
  • Toss potatoes with olive oil, garlic, and seasonings.
  • Spread in a single layer on a baking sheet.
  • Roast for 35–40 minutes, flipping halfway through.
  • Cook until golden and tender.
  • Sprinkle with fresh parsley and serve hot.

Notes
