Ingredients

Scale

2 ribeye or strip steaks, 1 to 1½ inches thick
Salt to taste
Freshly ground black pepper to taste
1 tablespoon vegetable or avocado oil
3 tablespoons unsalted butter
4 garlic cloves, minced
1 teaspoon fresh thyme or rosemary, optional
1 cup heavy cream
½ cup freshly grated Parmesan cheese
¼ cup chicken or beef broth

Instructions

  • Remove steak from refrigerator 30 minutes before cooking and pat dry.

  • Season both sides with salt and black pepper.

  • Heat a skillet over medium-high heat and add oil.

  • Sear steak 3 to 4 minutes per side until a deep crust forms.

  • Add butter, garlic, and herbs. Baste steak with melted butter.

  • Cook to desired doneness, then transfer to a plate and rest 5 to 10 minutes.

  • Deglaze pan with broth, scraping browned bits.

  • Add heavy cream and simmer until slightly thickened.

  • Reduce heat and stir in Parmesan gradually until smooth.

  • Slice steak against the grain and serve with sauce.

Notes

Use freshly grated Parmesan for a smooth sauce.
Allow steak to rest before slicing for juicier results.
Add broth if sauce becomes too thick.
