Grilled Ranch Garlic Parmesan Chicken Skewers are tender chicken pieces marinated in ranch seasoning, garlic, olive oil, lemon juice, and Parmesan, then grilled until lightly charred and juicy.

Ingredients

2 pounds boneless skinless chicken breasts or thighs cut into cubes
3 tablespoons olive oil
1 packet ranch seasoning mix about 1 ounce
3 cloves garlic minced
1/2 cup freshly grated Parmesan cheese plus extra for topping
1 tablespoon lemon juice
Wooden or metal skewers

Instructions

  • Cut chicken into uniform cubes and place in a large bowl.

  • Whisk together olive oil ranch seasoning garlic Parmesan and lemon juice.

  • Toss chicken in marinade until evenly coated. Cover and refrigerate for at least 30 minutes.

  • Preheat grill to medium-high heat and oil grates.

  • Thread chicken onto skewers leaving small spaces between pieces.

  • Grill for 10 to 14 minutes turning every few minutes until internal temperature reaches 165°F.

  • Sprinkle additional Parmesan during the final minute of cooking if desired.

  • Remove from grill and rest for 5 minutes before serving.

Notes

Soak wooden skewers for 30 minutes before grilling. Do not overcrowd skewers to allow even cooking. Add vegetables between chicken pieces if desired.
