2 cups mashed potatoes

1/2 cup all-purpose flour plus extra for dusting

Mix mashed potatoes with butter and salt.

Pat into a half-inch thick round and cut into four wedges.
Cook in a dry skillet over medium heat for 3 to 4 minutes per side until golden.
