Soft, sweet, and chewy cookies made with dates, chopped olives, and fresh thyme for a unique flavor twist.

Ingredients

1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pitted dates
1/4 cup finely chopped black olives
1 teaspoon fresh thyme leaves, chopped

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Toast pecans in a dry skillet 3–5 minutes (optional); cool.
  • Cream butter and brown sugar until light and fluffy. Mix in egg and vanilla.
  • Whisk flour, baking soda, and salt; fold into wet ingredients until combined.
  • Fold in chopped dates, olives, and thyme evenly.
  • Scoop dough onto baking sheet, 2 inches apart; slightly flatten each cookie.
  • Bake 10–12 minutes until edges are lightly golden; cool 5 minutes on sheet then transfer to wire rack.

Notes

Chill dough for firmer cookies; nuts can be added for texture; adjust olives and thyme to taste.
