Pear and Arugula Salad with Honey Vinaigrette is a fresh, light salad combining peppery arugula, juicy pears, creamy cheese, and a sweet-tangy dressing.

Ingredients

4 cups fresh arugula
2 ripe pears, cored and thinly sliced
1/4 cup crumbled goat cheese or feta
1/4 cup candied walnuts or pecans
1/4 small red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice or apple cider vinegar
Salt and freshly cracked black pepper to taste

Instructions

  • Whisk olive oil, honey, Dijon mustard, and lemon juice or vinegar to make vinaigrette.

  • Wash and dry arugula, place in a large bowl.

  • Add sliced pears, cheese, nuts, and red onion.

  • Toss gently with half the vinaigrette to coat.

  • Optional: add dried cranberries, pomegranate seeds, or fresh herbs.

  • Serve immediately.
