Pear and Arugula Salad with Honey Vinaigrette is a fresh, light salad combining peppery arugula, juicy pears, creamy cheese, and a sweet-tangy dressing.
4 cups fresh arugula
2 ripe pears, cored and thinly sliced
1/4 cup crumbled goat cheese or feta
1/4 cup candied walnuts or pecans
1/4 small red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice or apple cider vinegar
Salt and freshly cracked black pepper to taste
Whisk olive oil, honey, Dijon mustard, and lemon juice or vinegar to make vinaigrette.
Wash and dry arugula, place in a large bowl.
Add sliced pears, cheese, nuts, and red onion.
Toss gently with half the vinaigrette to coat.
Optional: add dried cranberries, pomegranate seeds, or fresh herbs.
Serve immediately.
