Wholesome and full of Mediterranean flavor, these Greek Chicken Bowls are clean eating meal prep at its best. High in protein, easy to customize, and perfect for lunch or dinner.
2 large chicken breasts (or 4 thighs)
2 tbsp olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 tsp dried oregano
½ tsp dried thyme
Salt and pepper to taste
2 cups cooked quinoa or brown rice
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
½ red onion, thinly sliced
½ cup kalamata olives (optional)
1 cup baby spinach or romaine
½ cup tzatziki sauce
¼ cup feta (optional)
Fresh parsley or dill, for garnish
Marinate chicken in olive oil, lemon, garlic, and herbs for 30 minutes.
Cook chicken in a skillet or grill pan until done; slice.
Assemble bowls with base, veggies, and chicken.
Top with tzatziki, feta, and herbs.
Store in meal prep containers up to 4 days.
