Wholesome and full of Mediterranean flavor, these Greek Chicken Bowls are clean eating meal prep at its best. High in protein, easy to customize, and perfect for lunch or dinner.

Ingredients

  • 2 large chicken breasts (or 4 thighs)

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • Salt and pepper to taste

  • 2 cups cooked quinoa or brown rice

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, chopped

  • ½ red onion, thinly sliced

  • ½ cup kalamata olives (optional)

  • 1 cup baby spinach or romaine

  • ½ cup tzatziki sauce

  • ¼ cup feta (optional)

  • Fresh parsley or dill, for garnish

Instructions

  • Marinate chicken in olive oil, lemon, garlic, and herbs for 30 minutes.

  • Cook chicken in a skillet or grill pan until done; slice.

  • Assemble bowls with base, veggies, and chicken.

  • Top with tzatziki, feta, and herbs.

  • Store in meal prep containers up to 4 days.
