2 large English cucumbers, thinly sliced
1 cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 small garlic clove, grated
2 tablespoons fresh dill, chopped
Salt to taste
Freshly ground black pepper to taste

Instructions

  • Slice cucumbers thinly and sprinkle lightly with salt.

  • Let sit 20 minutes, then pat dry.

  • Whisk together Greek yogurt, lemon juice, olive oil, garlic, dill, salt, and pepper.

  • Toss cucumbers with dressing until evenly coated.

  • Chill at least 30 minutes before serving.

  • Stir gently and garnish with extra dill if desired.

Notes
