Fiesta Lime Chicken with Avocado is a Mexican-inspired dish featuring citrus-marinated grilled chicken topped with melted cheese, creamy avocado, and fresh pico de gallo.
4 boneless skinless chicken breasts
1/4 cup fresh lime juice
1 teaspoon lime zest
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 teaspoon honey
Salt to taste
Black pepper to taste
1 cup shredded Monterey Jack or Mexican blend cheese
2 ripe avocados, sliced
1 cup pico de gallo
2 tablespoons chopped fresh cilantro
Optional sliced jalapeños or sour cream
Whisk lime juice, zest, olive oil, garlic, chili powder, cumin, paprika, honey, salt, and pepper.
Marinate chicken for at least 30 minutes.
Grill over medium-high heat for 5 to 7 minutes per side until internal temperature reaches 165°F.
Sprinkle cheese on top during last few minutes and allow to melt.
Rest chicken for 5 minutes.
Top with avocado slices, pico de gallo, and cilantro.
