This Honeycrisp Apple Broccoli Salad combines sweet and crisp apples with crunchy broccoli and a creamy dressing, making it the perfect refreshing side dish or light meal.

Ingredients

  • 2 cups fresh broccoli florets

  • 1 large Honeycrisp apple, cored and diced

  • 1/4 cup red onion, finely chopped

  • 1/3 cup dried cranberries

  • 1/4 cup sliced almonds, walnuts, or sunflower seeds

  • 1/4 cup Greek yogurt

  • 1/4 cup mayo

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey

  • Salt and pepper, to taste

Instructions

  • In a large bowl, combine broccoli, apple, red onion, and cranberries.

  • In a small bowl, whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt, and pepper.

  • Pour the dressing over the broccoli mixture and toss to combine.

  • Top with sliced almonds or your choice of nuts and seeds.

  • Serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.

Notes

  • For a sweeter version, add more honey to the dressing.

  • Make this salad vegan by substituting the mayo with vegan mayo and using maple syrup instead of honey.
