This High-Protein Broccoli Cheddar Soup is creamy, cheesy, and nourishing, with lean protein from chicken or lentils and rich, comforting flavors from cheddar and Greek yogurt.
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
4 cups broccoli florets
2 cups vegetable broth
1 cup milk
1 cup plain Greek yogurt
1½ cups shredded cheddar cheese
2 cups shredded chicken or 1 cup cooked lentils
Salt and pepper to taste
Optional: paprika or cayenne pepper
Sauté onion, garlic in olive oil for 5 minutes.
Add broccoli, broth, and simmer for 10–12 minutes.
Add chicken/lentils, milk, yogurt, and cheese. Stir until smooth.
Season with salt, pepper, and optional spices.
