This High-Protein Broccoli Cheddar Soup is creamy, cheesy, and nourishing, with lean protein from chicken or lentils and rich, comforting flavors from cheddar and Greek yogurt.

Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 4 cups broccoli florets

  • 2 cups vegetable broth

  • 1 cup milk

  • 1 cup plain Greek yogurt

  • 1½ cups shredded cheddar cheese

  • 2 cups shredded chicken or 1 cup cooked lentils

  • Salt and pepper to taste

  • Optional: paprika or cayenne pepper

Instructions

  • Sauté onion, garlic in olive oil for 5 minutes.

  • Add broccoli, broth, and simmer for 10–12 minutes.

  • Add chicken/lentils, milk, yogurt, and cheese. Stir until smooth.

  • Season with salt, pepper, and optional spices.

  • Serve warm!

Make ahead and store in the fridge for up to 4 days. Freeze for up to 3 months. Use plant-based options for a dairy-free version.
