Flavorful Dinner Delight features seasoned seared chicken, roasted vegetables, fluffy rice, and a creamy garlic Parmesan sauce layered into a comforting and balanced dinner.
2 boneless skinless chicken breasts or 4 thighs
2 tablespoons olive oil divided
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
Salt and black pepper to taste
1 red bell pepper sliced
1 zucchini sliced
1/2 red onion cut into wedges
1 cup cherry tomatoes
1 cup long grain white rice
2 tablespoons butter
3 cloves garlic minced
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
Fresh parsley for garnish
Cook rice according to package instructions and keep warm.
Mix 1 tablespoon olive oil with garlic powder paprika thyme salt and pepper. Coat chicken and rest 20 minutes.
Toss vegetables with remaining olive oil salt and pepper. Roast at 425°F for 18 to 22 minutes.
Sear chicken in a hot skillet for 5 to 7 minutes per side until internal temperature reaches 165°F. Rest and slice.
In the same skillet melt butter add garlic and cook briefly. Stir in cream and simmer. Add Parmesan and cook until slightly thickened.
Assemble by placing rice on plates topping with vegetables and sliced chicken then spooning sauce over everything. Garnish with parsley.
Do not overcrowd vegetables while roasting. Allow chicken to rest before slicing. Adjust sauce thickness by simmering longer or adding a splash of broth
