1 lb chicken breast or thighs, diced
2 tbsp oil
1 onion, chopped
2 celery stalks, chopped
1 bell pepper, chopped
3 garlic cloves, minced
1 tbsp Cajun seasoning (more to taste)
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 bay leaf (optional)
1 cup heavy cream or half-and-half
2 oz cream cheese (optional)
Salt and pepper to taste
1 tbsp flour or cornstarch + 2 tbsp water (optional, for thickening)
In large pot, sauté onion, celery, and bell pepper in oil for 5–7 minutes. Add garlic.
Stir in chicken and Cajun seasoning. Cook 3–4 minutes.
Add tomatoes and broth. Bring to simmer for 15–20 minutes.
Stir in cream and optional cream cheese. Simmer 5 minutes.
Mix flour/cornstarch with water and stir into soup. Simmer until thickened.
Taste and adjust seasoning. Serve hot.
