Instructions

  • 1 lb chicken breast or thighs, diced

  • 2 tbsp oil

  • 1 onion, chopped

  • 2 celery stalks, chopped

  • 1 bell pepper, chopped

  • 3 garlic cloves, minced

  • 1 tbsp Cajun seasoning (more to taste)

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups chicken broth

  • 1 bay leaf (optional)

  • 1 cup heavy cream or half-and-half

  • 2 oz cream cheese (optional)

  • Salt and pepper to taste

  • 1 tbsp flour or cornstarch + 2 tbsp water (optional, for thickening)

Notes

  • In large pot, sauté onion, celery, and bell pepper in oil for 5–7 minutes. Add garlic.

  • Stir in chicken and Cajun seasoning. Cook 3–4 minutes.

  • Add tomatoes and broth. Bring to simmer for 15–20 minutes.

  • Stir in cream and optional cream cheese. Simmer 5 minutes.

  • Mix flour/cornstarch with water and stir into soup. Simmer until thickened.

  • Taste and adjust seasoning. Serve hot.
