1.5 lbs chicken thighs or breasts
3 tbsp olive oil
Juice and zest of 1 lemon
3 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste
2 cups cooked rice, couscous, or quinoa
1 cup diced cucumber
1 cup cherry tomatoes, halved
1/4 cup sliced red onion
1/2 cup hummus
1/2 cup tzatziki
1/4 cup crumbled feta
Fresh parsley or dill for garnish
Optional: olives, pickled onions, pita wedges
Marinate chicken with olive oil, lemon juice/zest, garlic, oregano, salt, and pepper for at least 30 minutes.
Grill or bake chicken until cooked through. Let rest and slice.
Prepare grain base and chop vegetables.
