Hearty Chicken Veggie Soup (Cozy One-Pot Dinner) is a comforting soup filled with tender chicken, wholesome vegetables, and savory broth cooked together in one pot.
1 pound boneless skinless chicken breasts or thighs diced
1 tablespoon olive oil
1 medium onion diced
2 carrots sliced
2 celery stalks sliced
3 cloves garlic minced
2 medium Yukon Gold potatoes diced
1 cup green beans cut into pieces
6 cups low sodium chicken broth
1 teaspoon dried thyme
1 bay leaf
Salt and black pepper to taste
2 tablespoons fresh parsley chopped
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery and cook for 5 minutes.
Stir in garlic and cook for 30 seconds.
Add chicken, salt, pepper, and thyme and cook for 3 to 4 minutes.
Pour in broth and add potatoes and bay leaf.
Bring to a boil, reduce heat, cover, and simmer for 15 to 20 minutes.
Add green beans and cook for 8 to 10 minutes until tender.
Remove bay leaf, stir in parsley, and adjust seasoning.
