1 pound beef stew meat
1 tablespoon oil
1 medium onion chopped
2 carrots sliced
2 celery stalks sliced
2 cloves garlic minced
2 medium potatoes diced
4 cups beef broth
2 sprigs fresh thyme
1 bay leaf
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley
Brown beef in oil over medium-high heat. Remove and set aside.
Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook briefly.
Return beef to pot and add potatoes, thyme, and bay leaf.
Pour in broth to cover ingredients.
Simmer gently 1 1/2 to 2 hours until beef is tender.
Adjust seasoning, remove bay leaf, and garnish with parsley before serving.
Mash a few potatoes for thicker texture.
Skim excess fat if desired.
