A flavorful, hearty side dish featuring tender green beans, creamy potatoes, all tossed in zesty ranch seasoning. Perfect for family dinners, holidays, or potlucks.
1 lb green beans, trimmed
1 lb baby potatoes, diced
1 small onion, diced
2 cloves garlic, minced
1 packet ranch seasoning mix
2 tbsp olive oil or butter
Salt & pepper to taste
2–3 tbsp water (optional)
Cook bacon in a large skillet until crispy, then remove and crumble. Set aside.
In the same pan, sauté onion in bacon fat until softened, then add garlic and cook for 1 minute.
Add diced potatoes and cook for 10–12 minutes until starting to soften.
Add green beans and cook for 5–7 minutes until tender.
Sprinkle ranch seasoning over vegetables, stir in water to dissolve seasoning, and combine.
Stir in crumbled bacon, adjust seasoning, and serve hot.
For a creamier version, add a dollop of sour cream or a splash of cream at the end.
Can be made ahead and stored in the fridge for up to 3 days.
Substitute the bacon with turkey bacon or omit for a vegetarian version.
