1.5 lbs bone-in chicken pieces (drumsticks or thighs)
3 large carrots, peeled and cut into chunks
2 medium potatoes, peeled and cut into chunks
2 large tomatoes, quartered
1 yellow onion, quartered
1 corn on the cob, cut into sections (optional)
8–10 cups water
Salt and white pepper, to taste
Optional garnish: chopped scallions or cilantro
(Optional) Blanch chicken in boiling water for 1–2 minutes. Drain and rinse.
In a clean pot, combine chicken, carrots, potatoes, tomatoes, onion, and corn.
Add water to cover ingredients (8–10 cups).
Bring to a boil, then reduce to a gentle simmer.
Cover and simmer for 1.5 to 2 hours.
Add salt and white pepper to taste in the last 10 minutes.
Skim off excess oil or foam. Serve hot.
Use a slow cooker for hands-off cooking.
