A sweet and savory one-pan side dish of tender carrots and green beans glazed with honey, garlic, and butter. Perfect for holidays or weeknight dinners.
4 medium carrots, peeled and sliced
8 oz fresh green beans, trimmed
2 tbsp honey
1 tbsp butter
1 tbsp olive oil
2 garlic cloves, minced
Salt and pepper to taste
Optional: lemon juice, red pepper flakes, fresh herbs
Peel and slice carrots. Trim green beans.
Blanch carrots in boiling salted water for 3–4 minutes. Drain and set aside.
Heat olive oil and butter in a large skillet over medium heat.
Add carrots and green beans. Sauté for 6–8 minutes until tender-crisp.
Stir in garlic and cook for 30 seconds.
Drizzle in honey and stir to glaze. Cook 1–2 minutes more.
Season with salt, pepper, and optional lemon juice or herbs.
Use maple syrup for a vegan version.
