Honey Glazed Carrots & Green Beans is a simple side dish featuring tender vegetables coated in a light honey butter glaze with garlic and lemon.
3 medium carrots peeled and sliced
12 ounces fresh green beans trimmed
2 tablespoons butter
2 cloves garlic minced
2 tablespoons honey
1 tablespoon fresh lemon juice
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper
Bring a pot of salted water to a boil.
Add carrots and cook 3 minutes.
Add green beans and cook 3 to 4 minutes more.
Drain and transfer to ice water, then drain again.
Melt butter in a skillet over medium heat.
Sauté garlic for 30 seconds.
Add vegetables and cook 3 to 4 minutes.
Drizzle honey over vegetables and toss gently.
Season with salt, pepper, and lemon juice.
Do not overcook during blanching.
Add toasted nuts for extra texture.
Store leftovers in the refrigerator for up to 3 days.
