Honey Glazed Carrots & Green Beans is a simple side dish featuring tender vegetables coated in a light honey butter glaze with garlic and lemon.

Ingredients

3 medium carrots peeled and sliced
12 ounces fresh green beans trimmed
2 tablespoons butter
2 cloves garlic minced
2 tablespoons honey
1 tablespoon fresh lemon juice
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper

Instructions

  • Bring a pot of salted water to a boil.

  • Add carrots and cook 3 minutes.

  • Add green beans and cook 3 to 4 minutes more.

  • Drain and transfer to ice water, then drain again.

  • Melt butter in a skillet over medium heat.

  • Sauté garlic for 30 seconds.

  • Add vegetables and cook 3 to 4 minutes.

  • Drizzle honey over vegetables and toss gently.

  • Season with salt, pepper, and lemon juice.

Notes

Do not overcook during blanching.
Add toasted nuts for extra texture.
Store leftovers in the refrigerator for up to 3 days.
