4 bone-in skin-on chicken thighs or drumsticks
Salt to taste
Black pepper to taste
1 tablespoon oil
1 large onion chopped
3 cloves garlic minced
1 1/2 pounds Yukon Gold or red potatoes cut into chunks
3 carrots sliced thick
3 cups chicken broth
2 sprigs fresh thyme
1 bay leaf
1 tablespoon butter optional
2 tablespoons chopped fresh parsley
Season chicken with salt and pepper.
Brown chicken in oil over medium-high heat until golden on both sides. Remove and set aside.
Sauté onion for 3 minutes, then add garlic and cook briefly.
Add potatoes and carrots, stirring to coat in drippings.
Pour in broth and add thyme and bay leaf.
Return chicken to pot and bring to a gentle simmer.
