2 tbsp olive oil
1 small onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, minced
1 tsp dried oregano
½ tsp dried thyme
Salt and pepper to taste
6 cups chicken broth
2 cups cooked, shredded chicken
Juice of ½ lemon
2 tbsp chopped parsley
Optional: ¾ cup orzo or cooked rice
In a large pot, heat olive oil. Sauté onion, garlic, carrots, and celery until soft (5–7 min).
Stir in herbs, salt, pepper, and broth. Bring to a gentle boil.
Add chicken and optional pasta. Simmer 10–15 min (or until pasta is tender).
Remove from heat and stir in lemon juice and parsley.
Serve hot with optional Parmesan, pepper, or bread.
For low-carb, omit pasta or use riced cauliflower.
