2 tablespoons butter
2 cloves garlic, minced
1/4 cup chopped onion (optional)
4 cups chicken broth
8 oz cream cheese, softened and cubed
2 cups shredded cooked chicken
1/2 cup heavy cream
1/2 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
Optional: 1 cup spinach, 1/4 cup bacon bits, 1/2 cup shredded cheddar
Melt butter in a soup pot over medium heat. Add garlic and onion, sauté 2–3 minutes.
Pour in chicken broth and bring to a simmer. Add cream cheese and stir until fully melted.
Stir in shredded chicken. Simmer 5–10 minutes.
Add heavy cream, paprika, thyme, salt, and pepper. Simmer on low for another 5–10 minutes.
Stir in optional add-ins like spinach or bacon if using.
