  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • 1/4 cup chopped onion (optional)

  • 4 cups chicken broth

  • 8 oz cream cheese, softened and cubed

  • 2 cups shredded cooked chicken

  • 1/2 cup heavy cream

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • Optional: 1 cup spinach, 1/4 cup bacon bits, 1/2 cup shredded cheddar

Instructions

  • Melt butter in a soup pot over medium heat. Add garlic and onion, sauté 2–3 minutes.

  • Pour in chicken broth and bring to a simmer. Add cream cheese and stir until fully melted.

  • Stir in shredded chicken. Simmer 5–10 minutes.

  • Add heavy cream, paprika, thyme, salt, and pepper. Simmer on low for another 5–10 minutes.

  • Stir in optional add-ins like spinach or bacon if using.

  • Serve hot, garnished with herbs or cheese.

Notes

  • For extra flavor, use rotisserie chicken.

  • Avoid boiling after adding cream.

  • Soup thickens as it cools — add broth to thin if reheating.

  • Freezes well, though texture may slightly change.
