Famous La Scala Chopped Salad is a finely chopped Italian-American salad featuring crisp lettuce, chickpeas, salami, mozzarella, and a tangy red wine vinaigrette.

Ingredients

4 cups finely chopped iceberg lettuce
2 cups finely chopped romaine lettuce
1 cup canned chickpeas, drained and rinsed
1/2 cup Italian salami, finely chopped
1/2 cup shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1/2 teaspoon dried oregano
1/4 cup olive oil

Black pepper to taste

Instructions

  • Whisk red wine vinegar, Dijon mustard, oregano, salt, and pepper.

  • Slowly whisk in olive oil until emulsified.
