Cookie Layer:
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Brownie Layer:
1/2 cup unsalted butter, melted
1/2 cup semisweet chocolate, melted
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips or chunks (optional)
Preheat oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
Prepare cookie layer and press into pan.
Prepare brownie layer and spread over cookie layer.
Bake 25–30 minutes until edges set.
Cool completely, then slice into squares.
Store in airtight container or freeze.
Sprinkle sea salt, add nuts or caramel for variation. Chill cookie layer slightly before adding brownie layer for cleaner separation.
