Fresh parsley chopped optional
Skewers wooden or metal
Slice zucchini evenly into 1/2 inch rounds.
Melt butter over low heat and stir in olive oil and garlic. Cook briefly until fragrant.
Thread zucchini onto skewers leaving slight space between pieces.
Brush generously with garlic butter and season with salt and pepper.
Grill over medium heat for 8 to 10 minutes turning occasionally until tender with light char.
Sprinkle Parmesan during final minute if desired.
Remove from grill and brush with remaining garlic butter. Garnish with parsley and serve.
Soak wooden skewers for 30 minutes before grilling. Avoid high heat to prevent garlic from burning. Do not slice zucchini too thin.
