Crispy zucchini fritters made with almond flour and Parmesan — high in protein, low in carbs, and perfect for air frying or pan-searing. A healthy and delicious way to enjoy zucchini.
2 medium zucchinis, grated
2 large eggs
½ cup almond flour or chickpea flour
¼ cup grated Parmesan cheese
1 garlic clove, minced
2 tbsp chopped herbs (parsley, dill, chives)
½ tsp salt
¼ tsp black pepper
Optional: 1 tbsp unflavored protein powder
Grate zucchini and salt. Let sit 10–15 minutes, then squeeze out excess moisture.
Mix with eggs, flour, cheese, garlic, herbs, and seasonings.
Form into 8–10 small patties and let rest 5 minutes.
Air Fryer: Preheat to 375°F, spray fritters, and air fry 10–12 min, flipping halfway.
Skillet: Heat oil, cook 3–4 min per side until crisp and golden.
Serve warm with yogurt dip, herbs, or your favorite sauce.
Store in fridge up to 4 days.
Freeze for up to 2 months.
