Crispy zucchini fritters made with almond flour and Parmesan — high in protein, low in carbs, and perfect for air frying or pan-searing. A healthy and delicious way to enjoy zucchini.

Ingredients

  • 2 medium zucchinis, grated

  • 2 large eggs

  • ½ cup almond flour or chickpea flour

  • ¼ cup grated Parmesan cheese

  • 1 garlic clove, minced

  • 2 tbsp chopped herbs (parsley, dill, chives)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: 1 tbsp unflavored protein powder

Instructions

  • Grate zucchini and salt. Let sit 10–15 minutes, then squeeze out excess moisture.

  • Mix with eggs, flour, cheese, garlic, herbs, and seasonings.

  • Form into 8–10 small patties and let rest 5 minutes.

  • Air Fryer: Preheat to 375°F, spray fritters, and air fry 10–12 min, flipping halfway.
    Skillet: Heat oil, cook 3–4 min per side until crisp and golden.

  • Serve warm with yogurt dip, herbs, or your favorite sauce.

Notes

  • Store in fridge up to 4 days.

  • Freeze for up to 2 months.

  • Add spinach, feta, or hot sauce for extra flavor.
