Ingredients

pounds flank or sirloin steak
¼ cup balsamic vinegar
3 tablespoons olive oil
1 tablespoon Dijon mustard
2 garlic cloves, minced
Salt and freshly ground black pepper to taste
2 ears fresh corn
5 cups mixed salad greens
1 cup cherry tomatoes, halved
¼ cup thinly sliced red onion
½ cup crumbled Gorgonzola cheese
1 tablespoon honey
2 tablespoons balsamic vinegar for dressing
3 tablespoons olive oil for dressing

Instructions

  • Whisk balsamic vinegar, olive oil, Dijon, garlic, salt, and pepper.

  • Marinate steak 30 minutes to 4 hours.

  • Preheat grill to medium-high heat.

  • Grill corn 8 to 10 minutes until lightly charred; remove kernels.

  • Grill steak 4 to 6 minutes per side to desired doneness.

  • Rest steak 10 minutes, then slice against the grain.

  • Combine greens, tomatoes, onion, and corn in a bowl.

  • Whisk dressing ingredients and toss lightly with greens.

  • Top salad with sliced steak and crumbled Gorgonzola.
