Ingredients

2 ripe mangoes diced
1 English cucumber sliced
1/2 red bell pepper thinly sliced
1/4 red onion thinly sliced
1/4 cup fresh cilantro chopped
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
Pinch of chili flakes optional

Instructions

  • Dice the mango into bite-sized cubes.

  • Slice cucumber, bell pepper, and red onion thinly.

  • Combine mango, cucumber, bell pepper, and onion in a bowl.

  • Add chopped cilantro.

  • Whisk lime juice, olive oil, salt, and chili flakes in a small bowl.

  • Pour dressing over salad and toss gently.
