1½ lbs boneless, skinless chicken breasts or thighs
3 tbsp olive oil
2 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
½ tsp paprika
½ tsp ground cumin
Salt and pepper, to taste
2 cups cooked quinoa or brown rice
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, thinly sliced
½ cup kalamata olives, halved
½ cup feta cheese, crumbled
½ cup tzatziki or hummus
2 tbsp fresh parsley or dill, chopped
Lemon wedges, for serving
Whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
Marinate chicken for at least 30 minutes (up to 4 hours).
Cook grains according to package directions. Fluff and season.
Prepare toppings: tomatoes, cucumber, onion, olives, feta, and herbs.
Grill, pan-sear, or bake chicken until cooked through (165°F). Rest, then slice.
Assemble bowls with grains, chicken, toppings, and a dollop of tzatziki.
