14 oz smoked andouille sausage, sliced
2 tbsp olive oil
1 small onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
2 cups uncooked penne pasta
2 cups chicken broth
1 cup heavy cream
1.5 tbsp Cajun seasoning
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley, for garnish
In a large skillet or Dutch oven, brown sausage over medium heat. Remove and set aside.
In the same pan, sauté onion and bell pepper until soft, about 3–4 minutes. Add garlic and cook 30 seconds.
Stir in Cajun seasoning, then add uncooked pasta, broth, and cream. Bring to a boil.
Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
Stir in cooked sausage and Parmesan. Cook 2–3 more minutes until creamy.
Garnish with parsley and serve hot.
