One Pot Cajun Sausage Pasta Recipe

A rich and spicy one-pot pasta dish with smoked sausage, creamy Cajun sauce, and tender pasta — ready in 30 minutes and packed with bold Southern flavor.

Ingredients

  • 14 oz smoked andouille sausage, sliced

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

  • 2 cups uncooked penne pasta

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1.5 tbsp Cajun seasoning

  • 1/2 cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh parsley, for garnish

Instructions

  • In a large skillet or Dutch oven, brown sausage over medium heat. Remove and set aside.

  • In the same pan, sauté onion and bell pepper until soft, about 3–4 minutes. Add garlic and cook 30 seconds.

  • Stir in Cajun seasoning, then add uncooked pasta, broth, and cream. Bring to a boil.

  • Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.

  • Stir in cooked sausage and Parmesan. Cook 2–3 more minutes until creamy.

  • Garnish with parsley and serve hot.

Notes

Adjust spice level to taste. Add shrimp or extra veggies for variation. Store leftovers in the fridge for up to 3 days.
