Ingredients

Scale
  • 1 tbsp olive oil

  • 1 lb Italian sausage (or ½ sausage + ½ ground beef)

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 tsp Italian seasoning

  • ½ tsp red pepper flakes (optional)

  • 1 (28 oz) can crushed tomatoes

  • 1 (14 oz) can fire-roasted diced tomatoes

  • 4 cups chicken or beef broth

  • 1 bay leaf

  • 8 oz broken lasagna noodles

  • Salt and pepper to taste

Toppings:

  • Ricotta cheese

  • Shredded mozzarella

  • Grated parmesan

  • Fresh basil or parsley

Instructions

  • In a large pot, brown sausage in olive oil. Remove excess grease.

  • Add onion and garlic. Sauté 5 minutes.

  • Stir in tomato paste, seasoning, crushed tomatoes, broth, and bay leaf.

  • Bring to a boil. Add pasta and simmer 10–12 minutes until al dente.

  • Remove bay leaf. Season to taste.

  • Ladle into bowls. Top with ricotta, mozzarella, and parmesan. Serve warm

Notes

For meal prep, cook pasta separately. Freeze soup without pasta for best results. Add greens like spinach for extra nutrition.
