Easy Pineapple Chicken with Rice – Sweet & Savory One-Pan Dinner is a comforting meal featuring tender chicken, juicy pineapple, and fluffy rice simmered together in a flavorful sauce.
1 1/2 pounds boneless skinless chicken thighs cut into bite sized pieces
2 cups fresh pineapple chunks
1 1/2 cups long grain white rice
2 1/4 cups low sodium chicken broth
1/3 cup pineapple juice
3 tablespoons low sodium soy sauce
1 tablespoon honey or brown sugar
1 red bell pepper diced
3 cloves garlic minced
1 teaspoon fresh ginger grated
1 tablespoon neutral cooking oil
1 teaspoon sesame oil
2 green onions sliced
Salt and black pepper to taste
Season chicken with salt and black pepper.
Heat oil in a large deep skillet over medium high heat and brown chicken for 4 to 5 minutes. Remove and set aside.
In the same pan sauté garlic and ginger for 30 seconds.
Add bell pepper and cook for 2 minutes.
Stir in rice and toast for 1 minute.
Pour in chicken broth, pineapple juice, soy sauce, and honey. Stir well.
Return chicken to the pan and add pineapple chunks.
Bring to a gentle boil then reduce heat to low and cover.
Simmer for 15 to 18 minutes until rice is tender and liquid absorbed.
Rest covered for 5 minutes, drizzle with sesame oil, and garnish with green onions before serving.
Use canned pineapple in juice if fresh is unavailable. Brown rice requires additional liquid and longer cooking time. Add red pepper flakes for mild heat.
