A bright, fluffy Greek-style rice dish flavored with lemon juice, garlic, onion, and herbs. This 35-minute side is perfect for pairing with Mediterranean mains or adding to your weekly meal prep.

  • 1 cup long grain white rice (basmati or jasmine)

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 23 garlic cloves, minced

  • 2 cups chicken or vegetable broth

  • 1/4 cup fresh lemon juice

  • 1 tsp lemon zest

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 23 tbsp chopped fresh parsley (plus dill or mint if desired)

Instructions

  • Rinse rice under cold water until clear; drain well.

  • Heat olive oil in a medium saucepan. Sauté onion for 4–5 minutes. Add garlic and cook 30 seconds.

  • Add rice and stir to coat. Toast for 1–2 minutes.

  • Pour in broth, lemon juice, zest, salt, and pepper. Bring to boil.

  • Cover, reduce heat to low, and simmer 15–18 minutes until liquid is absorbed.

  • Remove from heat, let rest 5 minutes, then fluff with a fork.

  • Stir in fresh herbs and adjust seasoning if needed.

Notes

  • Rinse rice thoroughly for fluffiness.

  • Add turmeric for color.

  • Reheat with a splash of broth to refresh.
