A bright, fluffy Greek-style rice dish flavored with lemon juice, garlic, onion, and herbs. This 35-minute side is perfect for pairing with Mediterranean mains or adding to your weekly meal prep.
1 cup long grain white rice (basmati or jasmine)
2 tbsp olive oil
1 small onion, finely chopped
2–3 garlic cloves, minced
2 cups chicken or vegetable broth
1/4 cup fresh lemon juice
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
2–3 tbsp chopped fresh parsley (plus dill or mint if desired)
Rinse rice under cold water until clear; drain well.
Heat olive oil in a medium saucepan. Sauté onion for 4–5 minutes. Add garlic and cook 30 seconds.
Add rice and stir to coat. Toast for 1–2 minutes.
Pour in broth, lemon juice, zest, salt, and pepper. Bring to boil.
Cover, reduce heat to low, and simmer 15–18 minutes until liquid is absorbed.
Remove from heat, let rest 5 minutes, then fluff with a fork.
Stir in fresh herbs and adjust seasoning if needed.
Rinse rice thoroughly for fluffiness.
Add turmeric for color.
Reheat with a splash of broth to refresh.
