A hearty and flavorful Southern-style side dish made with fresh green beans, tender baby potatoes, smoky bacon, and zesty ranch seasoning — perfect for potlucks and family dinners.

Ingredients

  • 1 lb fresh green beans, trimmed and halved

  • lbs baby potatoes, halved

  • 6 slices thick-cut bacon

  • 1 small onion, sliced (optional)

  • 2 tbsp olive oil or reserved bacon grease

  • 1 packet ranch seasoning mix (or 2 tbsp homemade blend)

  • ½ tsp black pepper (or to taste)

  • Salt (optional, to taste)

Instructions

  • Cook bacon in a large skillet until crispy. Remove, crumble, and reserve 2 tbsp drippings.

  • (Optional) Sauté onion in drippings until soft, about 3 minutes.

  • In a large bowl, toss green beans, potatoes, onions, ranch seasoning, pepper, and oil.

  • Spread on a baking sheet or cook in the skillet.

  • Oven: Roast at 400°F for 25–30 minutes, stirring halfway.

  • Stovetop: Cover and cook 20–25 minutes on medium heat.

  • Stir in bacon before serving. Serve hot

Notes

  • Use turkey bacon or skip for a lighter version.

  • Add cheese, red pepper flakes, or cooked sausage for variations.

  • Can be made ahead and reheated.
