A hearty and flavorful Southern-style side dish made with fresh green beans, tender baby potatoes, smoky bacon, and zesty ranch seasoning — perfect for potlucks and family dinners.
1 lb fresh green beans, trimmed and halved
1½ lbs baby potatoes, halved
6 slices thick-cut bacon
1 small onion, sliced (optional)
2 tbsp olive oil or reserved bacon grease
1 packet ranch seasoning mix (or 2 tbsp homemade blend)
½ tsp black pepper (or to taste)
Salt (optional, to taste)
Cook bacon in a large skillet until crispy. Remove, crumble, and reserve 2 tbsp drippings.
(Optional) Sauté onion in drippings until soft, about 3 minutes.
In a large bowl, toss green beans, potatoes, onions, ranch seasoning, pepper, and oil.
Spread on a baking sheet or cook in the skillet.
Oven: Roast at 400°F for 25–30 minutes, stirring halfway.
Stovetop: Cover and cook 20–25 minutes on medium heat.
Stir in bacon before serving. Serve hot
Use turkey bacon or skip for a lighter version.
Add cheese, red pepper flakes, or cooked sausage for variations.
