2 lbs potatoes, cut into 1-inch cubes
1 packet Lipton Onion Soup Mix
3 tbsp olive oil
Salt & pepper to taste
Fresh parsley for garnish
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
