2 medium sweet potatoes, sliced into ½-inch rounds
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup crumbled feta cheese
2 tablespoons honey
Optional: chopped fresh thyme or parsley, red pepper flakes, chopped nuts
Preheat oven to 425°F (220°C).
Slice sweet potatoes into ½-inch thick rounds.
Toss with olive oil, salt, and pepper.
Arrange on a parchment-lined baking sheet in a single layer.
Roast for 20 minutes, flip, then roast 10–15 more minutes until tender and golden.
Remove from oven and top with crumbled feta.
