2 medium sweet potatoes, sliced into ½-inch rounds
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup crumbled feta cheese
2 tablespoons honey
Optional: chopped fresh thyme or parsley, red pepper flakes, chopped nuts

Instructions

  • Preheat oven to 425°F (220°C).

  • Slice sweet potatoes into ½-inch thick rounds.

  • Toss with olive oil, salt, and pepper.

  • Arrange on a parchment-lined baking sheet in a single layer.

  • Roast for 20 minutes, flip, then roast 10–15 more minutes until tender and golden.

  • Remove from oven and top with crumbled feta.

  • Drizzle with honey and optional herbs or toppings.

  • Serve warm.

Notes

Use maple syrup for a vegan version. Add nuts or herbs for texture. Reheat in oven for 5–10 minutes before serving.
