4 bone-in skin-on chicken thighs
Salt to taste
Black pepper to taste
1 tablespoon oil
1 medium onion chopped
3 cloves garlic minced
1 1/2 pounds Yukon Gold potatoes cut into chunks
3 carrots sliced thick
3 cups chicken broth
2 sprigs fresh thyme
1 bay leaf
1 tablespoon butter
2 tablespoons chopped fresh parsley
Season chicken with salt and pepper.
Brown chicken in oil over medium-high heat until golden on both sides. Remove and set aside.
Sauté onion for 3 minutes, then add garlic and cook briefly.
Add potatoes and carrots, stirring to coat.
