2 tablespoons olive oil
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
8 to 10 small corn tortillas
1/2 cup diced white onion
1/2 cup chopped fresh cilantro
1 avocado, sliced
1/3 cup crumbled queso fresco
Lime wedges for serving

Instructions

  • Whisk olive oil, lime juice, garlic, and spices to create marinade.

  • Coat skirt steak and refrigerate at least 30 minutes.

  • Cook steak in a hot skillet 3 to 4 minutes per side.

  • Rest steak 5 minutes, then slice thinly against the grain.

  • Warm tortillas in a dry skillet.

  • Fill tortillas with steak and desired toppings.
