Easy Spicy Salmon Sushi Bake Recipe is a layered casserole of seasoned sushi rice topped with creamy, spicy salmon and baked until warm and slightly golden.

Ingredients

2 cups uncooked sushi rice
2 1/2 cups water
3 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
1 pound salmon fillets skin removed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
2 tablespoons sriracha
2 ounces cream cheese softened optional
1 teaspoon soy sauce
1/2 teaspoon sesame oil
2 green onions sliced
1 tablespoon toasted sesame seeds
Nori sheets for serving

Instructions

  • Rinse sushi rice until water runs mostly clear and cook with water according to package directions.

  • Bake salmon at 375°F for 12 to 15 minutes until flaky, then cool and flake.

  • Mix rice vinegar, sugar, and salt until dissolved and fold into cooked rice.

  • Press rice evenly into a greased baking dish.

  • Combine salmon, mayonnaise, sriracha, cream cheese, soy sauce, sesame oil, and green onions.

  • Spread salmon mixture evenly over rice.

  • Bake at 375°F for 15 to 20 minutes until heated through.

  • Broil briefly if desired for light browning.

  • Rest for 5 minutes, garnish with sesame seeds, and serve with nori.

Notes

Adjust sriracha to control heat.
Use Japanese mayonnaise for richer flavor.
Add furikake seasoning for extra depth.
