Spinach and Feta Pinwheels, gluten-free, feature flaky gluten-free pastry wrapped around a creamy spinach and feta filling. Golden, savory, and easy to serve, they are perfect for brunch or appetizers.

1 sheet gluten-free puff pastry, chilled
1 cup finely chopped spinach, well drained
3/4 cup crumbled feta cheese
4 ounces cream cheese, softened
1 small garlic clove, minced
Pinch black pepper
1 egg, beaten for brushing

Instructions

  • Preheat oven to 400°F and line a baking sheet with parchment paper.

  • Cook spinach until wilted and squeeze out excess moisture.

  • Mix spinach, feta, cream cheese, garlic, and pepper.

  • Roll out pastry into a thin rectangle.

  • Spread filling evenly, leaving a small border.

  • Roll tightly into a log and chill 15 to 20 minutes.

  • Slice into 1-inch rounds and place on baking sheet.

  • Brush with beaten egg.

  • Bake 18 to 22 minutes until golden.

Notes
