4 large flour or whole wheat tortillas
1 ½ cups shredded mozzarella cheese
¾ cup crumbled feta cheese
2 cups fresh baby spinach
¼ small red onion thinly sliced
1 tablespoon olive oil
½ teaspoon dried oregano
Black pepper to taste
Heat olive oil in a skillet over medium heat.
Add spinach and cook until wilted. Remove and drain excess moisture.
Place one tortilla in the skillet and sprinkle mozzarella evenly on top.
Add spinach, red onion, feta, oregano, and black pepper.
Top with a second tortilla and press gently.
Cook 2 to 3 minutes per side until golden and cheese is melted.
