Strawberry Basil Chicken is a sweet and savory dish featuring seared chicken topped with fresh strawberries, basil, and a light balsamic glaze.
4 boneless skinless chicken breasts
1 tablespoon olive oil
2 cloves garlic, minced
1/3 cup balsamic vinegar
1 tablespoon honey
1 1/2 cups fresh strawberries, sliced
1/4 cup fresh basil leaves, torn
Salt to taste
Black pepper to taste
Optional goat cheese for garnish
Season chicken with salt and pepper.
Heat olive oil in a skillet over medium heat.
Cook chicken 5 to 7 minutes per side until internal temperature reaches 165°F.
Remove chicken and set aside.
Sauté garlic briefly in the same skillet.
Add balsamic vinegar and honey, simmer 3 to 5 minutes until slightly thickened.
Return chicken to skillet, spoon glaze over top.
Add strawberries and warm gently for 1 to 2 minutes.
Remove from heat and top with fresh basil before serving.
