1 cup cherry tomatoes, halved
1/4 cup finely diced red onion
2 tablespoons fresh lime juice
2 tablespoons olive oil
1/4 cup chopped fresh cilantro or parsley
Salt to taste
Black pepper to taste
Optional pinch chili flakes or 1 small jalapeño, minced
Remove kernels from corn and place in a large bowl.
Add halved cherry tomatoes and diced red onion.
In a small bowl, whisk lime juice, olive oil, salt, and pepper.
Pour dressing over corn mixture and stir gently.
Let sit for 10 minutes.
Fold in diced avocado and chopped herbs just before serving.
Adjust seasoning and serve immediately.
Add avocado at the last minute to prevent browning. Grilled corn adds a subtle smoky flavor.
