2 ripe mangoes, sliced
1 large cucumber (or 2 small), thinly sliced
¼ red onion or 2 shallots, thinly sliced
¼ cup fresh cilantro, chopped
2 tbsp fresh mint, chopped
1 Thai chili, sliced (optional)
¼ cup roasted peanuts or cashews
2 tbsp fresh lime juice
1 tbsp fish sauce or soy sauce
1 tsp sugar or honey
Slice mangoes, cucumbers, onion, and herbs. Place in a large bowl.
