Ingredients

  • 1 large cucumber (or 2 small), thinly sliced

  • ¼ red onion or 2 shallots, thinly sliced

  • ¼ cup fresh cilantro, chopped

  • 2 tbsp fresh mint, chopped

  • 1 Thai chili, sliced (optional)

  • ¼ cup roasted peanuts or cashews

  • 2 tbsp fresh lime juice

  • 1 tbsp fish sauce or soy sauce

  • 1 tsp sugar or honey

Instructions

  • Slice mangoes, cucumbers, onion, and herbs. Place in a large bowl.

  • In a separate bowl, whisk together lime juice, fish sauce, and sugar.

  • Pour dressing over salad and toss gently to combine.
